If you are ever in LA and feel like having traditionally prepared real Japanese sushi, you should try Hiko Sushi. It's in a small shopping mini-mall where you wouldn't expect to find any good restaurants. This place consistently serves high quality sushi. I don't know about you, but I'm really big on how fish is cut for sushi. The way this chef cuts his fish is amazing. The sashimi completely wraps around the warm rice. Hmmm... I feel like I finally found a place where I can honestly say it's as good or better than sushi you could find in Japan.
There is some etiquette you need to know before going to this place.
• Turn off your cell phone! Otherwise the sushi chef will be VERY annoyed with you.
• Don't expect to find American sushi. No California rolls!
• They don't serve any kitchen food and that means tempura or teriyaki stuff.
• When you sit at the sushi bar, it's only "Omakase" style which means you only eat what the chef brings to your table.
Other than that, you just have to lay back and really enjoy the food!
I read some reviews online, and some people left negative feedback on how the sushi chef wasn't friendly. Honestly, I was kind of scared of the chef after my first visit. But, I had to go back because the sushi was damn good! And now... I know their etiquette at this place, and I've had much better experience here :-) And I think the chef is even starting to warm up to me little more. (maybe..?)
The big plus is they believe in keeping the tradition of true Japanese sushi preparation and serving you the absolute best. They say that the sushi chef hand picks each fish daily from fish market. They don't use farm raised fish. They use natural and wild fish, and they only use organic products! And I'm a big supporter of that! If they start serving real wasabi (freshly grated), there will be nothing else I could ask for...

I absolutely love Hiko Sushi as well. You are right, the chef (there is only one sushi chef at Hiko) is sort of gruff at times, but his attitude has changed for the better since we've been there a few times now. And the rest of the staff (all relatives?) are very attentive and friendly as well. I have only one wish. It would be nice if Hiko only served one piece of sushi with their omakase-style service at the counter. I know this goes against the norm, since a typical order of sushi is two identical pieces per plate. But at a non-omakase place, I usually like to split an order of sushi with my wife, so we can have a greater variety of stuff. At Hiko, everything is so good, you want to try it all, but after eating two sushi items per plate...you tend to get full quickly....with less variety.

Yea.. I wish he could do that too!! So, we could try more of a variety of his delicious tasty sushi!!

Ugh! Why did I read your post on Hiko AGAIN! It just makes me want SUSHI!!!! And yes, I would love it if I could have the "low volume, high variety" omakase option!
