Meanwhile, Happy Thanksgiving to you all and please enjoy my recipe for healthy stuffing!

I've come across this cool healthy recipe for stuffing about 2 years ago using wild rice, couscous, and quinoa instead of bread, and I've mixed and matched with other recipes, added and subtracted a few ingredients and came up with my own! Many people around me including my husband was not a big fan of stuffing before, so I wanted to make something special. And everyone loved this stuffing so much, so I thought to share this recipe with everyone who came to read my blog post :P
Anyway!! Here is my recipe!

INGREDIENTS:
1 cup Brown Rice Medley
1/2 cup Couscous
1/2 cup Quinoa
1 med Onion, chopped
1 stalk Celery, diced
2 cups slices Crimini Mushrooms
1 med Green Apple, diced
4 med cloves Garlic, minced
1/2 cup Walnuts, chopped
1/2 cup Raisins
1/2 cup fresh Parsley, chopped
2 tbs fresh Sage, chopped
3 tbs fresh Tyme, chopped
1/2 cup and 1 tbs Chicken Broth
Salt & Black Pepper for taste

2 bunches Green Onion, chopped
1/2 cup Cilantro, chopped

Directions:
1. Cook Brown Rice Medley
Bring 3 cups of lightly salted water to a boil. While waiting, wash rice under running water in a strainer and set a side.
When the water is boiling, add Brown Rice Medley, cover, turn heat to low and cook for about 45min (until tender - DO NOT Overcook).
It says on my print out that "You will most likely have excess water when rice is cooked properly."
Drain out excess water, and set aside in a large bowl.

Cook Couscous - Best to follow the direction on the packaging

Cook Quinoa - Best to follow the direction on the packaging

2. Heat 1TBS Chicken Broth in a large non-stick skillet. Saute Onion in broth over medium heat for 5min. Add mushrooms and celery and continue to saute for another 2-3min.

3. Mix all the stuffing ingredients besides Green Onion and Cilantro together in a large bowl and season with salt and pepper.

4. Stuff the Turkey before roasting. (If you are not stuffing your turkey to save time, I would just put this stuffing into pyrex and bake for 30 min.)

5. Mix chopped Green Onion & Cilantro
